New Recipes

Chicken Doritos Casserole
 
 Fruit Pizzas
 
Breakfast Sausage Squares 
 
One of the Athletic Trainers we work with lost her mom to cancer last week.  We have all been helping to cover her high school and this week we are taking turns cooking for her and her family.  Brian and I had tonight (Tuesday) to prepare a meal for 6 people.  When I was trying to decide what do cook I decided I didn't want to make something that they might have already had...so I went to pinterest.   I had heard a lot of good things about chicken doritos casserole so we decided to try it.  Now I know what your thinking...we shouldn't be making a new dish that we have never had and sending it to someone else...Problem solved! We bought extra of everything so we could do a trial run for our dinner last night (monday night) and it all turned out great.  The fruit pizzas were easy because we used sugar cookie dough as the crust, mixed up cream cheese, sugar, and vanilla, and then decorated with strawberries, blackberries, and blueberries.  The Breakfast Sausage Squares were an extra add on I threw in because they were easy and only took 3 ingredients.  They turned out good as well and Brian decided they would be good with a sunny side up egg. In case your curious here are the recipies for the chicken doritos casserole and sausage squares.
 

Chicken Doritos Casserole
4 Boneless chicken breasts
1 package Nacho Cheese Doritos
1 Can rotel
1 Medium onion
1 ½ Cups sour cream
1 package taco seasoning (if you don't like spicy stuff only use 1/4 to 1/2 of pack)
1 Family size can cream of chicken soup
1 Family size can cream of mushroom soup
Shredded Cheese

1.     Bake chicken and then shred or cube.
2.     Line casserole dish with Doritos.
3.     Mix rotel, onion, sour cream, taco seasoning, and soups together.  Mix this with shredded/chopped chicken.
4.     Layer over Doritos
5.     Top with cheese and bake at 375 degrees until cheese is melted.   Approximately 30 minutes.

 

Sausage Squares
1 - roll of sausage
1 - 4oz cream cheese
1 package crescent rolls

1.     Cook the sausage in a pan until browned
2.     Combine sausage and cream cheese in a bowl and mix.
3.     Take an 8x8 pan, and lay a  layer of unbaked crescent rolls (I think it takes 4 crescent rolls a layer) on the bottom of the greased pan.
4.     Spread the sausage/cream cheese mixture on top of unbaked crescent rolls.
5.     Take reaming crescent rolls and cover the top.
6.     Bake about 15 minutes or until top is golden.
7.     8x8 pan will make 9 sausage squares. 

(I doubled this recipe for a casserole pan)

The Joy of Finishing a Quilt :)

The best feeling for a quilter is to complete a project (for me it's to finish a quilt and put it in the washer...because that means it truly is finished).   The worst feeling for a quilter is to finish a project and hate it/not like it. This one turned out better than expected.  This quilt is a late graduation gift for a friend of mine.  This quilt will mail out tomorrow and best of all the owner doesn't know it's done and I'm mailing it, so it will be a surprise.
 

 



Too Many Choices

I have completed the blue and white Irish Chain quilt that I was working on (its in the dryer at the moment but pictures to come soon).  Now I'm getting ready to start marking the 4th of July quilt, but I'm also looking through quilting magazines, quilting books, and the fabric I have on hand to get ideas for the next quilt projects.  Below are some of the patterns that I have picked out...one problem...I don't know which one I want to do first!  That's where I am hoping you all can help me...I need a vote of which project I should choose.  Whichever quilt is chosen will be done in a queen size version.
 
1. Amercian Flag Wall Hanging.  I am thinking about reworking this pattern into a full size quilt.

 
2. Homeland Skies.  I really like this pattern and I already know how I would quilt it!

 
 3. Road Home (it's actually called Road to Oklahoma, but I'm not from Oklahoma, so I renamed it).  I have been looking at this pattern for a long time but I would change the blue to green or purple.

4. Tumbling Blocks.  This is a scrap quilt.

 
5. Rolling Star.  I have looked at this pattern for a long time.  I have always wanted to do this pattern in the colors shown but I think the fabric I bought at Christmas in a Quilt shop near Washington DC would be perfect for this pattern.
 
 
Once I get the 4th of July quilt done I plan to piece two or three quilts again and then quilt them.  

Catnip

Catnip from our garden has taken off and Jabez seems to appreciate the gardening choice.

Valentine's Day

Orginally Brian and I had decided not to do ANY gifts for Valentine's Day, but Wednesday night (the 13th) I told him I had something very small for him.  I had gotten him a reeses's chocolate heart, which in turn he looks at me with a sneaky smile and asked me if I wanted my present.  He got me a new charm for my charm braclet.  The flowers were actually a decoration for our Superbowl party but still look really good.

Luck of the Irish

Marking shamrocks can be a little tricky.  I am marking each one individually as I get to the shamrock sections. 

 This is the view from the back of the quilt.  The shamrock pattern really shows up here.
Quilted shamrock.  I'm playing with the idea of making a 4 leaf shamrock template and putting one 4 leaf clover in the middle of the quilt for luck.
