New Recipes

Chicken Doritos Casserole
 
 Fruit Pizzas
 
Breakfast Sausage Squares 
 
One of the Athletic Trainers we work with lost her mom to cancer last week.  We have all been helping to cover her high school and this week we are taking turns cooking for her and her family.  Brian and I had tonight (Tuesday) to prepare a meal for 6 people.  When I was trying to decide what do cook I decided I didn't want to make something that they might have already had...so I went to pinterest.   I had heard a lot of good things about chicken doritos casserole so we decided to try it.  Now I know what your thinking...we shouldn't be making a new dish that we have never had and sending it to someone else...Problem solved! We bought extra of everything so we could do a trial run for our dinner last night (monday night) and it all turned out great.  The fruit pizzas were easy because we used sugar cookie dough as the crust, mixed up cream cheese, sugar, and vanilla, and then decorated with strawberries, blackberries, and blueberries.  The Breakfast Sausage Squares were an extra add on I threw in because they were easy and only took 3 ingredients.  They turned out good as well and Brian decided they would be good with a sunny side up egg. In case your curious here are the recipies for the chicken doritos casserole and sausage squares.
 

Chicken Doritos Casserole
4 Boneless chicken breasts
1 package Nacho Cheese Doritos
1 Can rotel
1 Medium onion
1 ½ Cups sour cream
1 package taco seasoning (if you don't like spicy stuff only use 1/4 to 1/2 of pack)
1 Family size can cream of chicken soup
1 Family size can cream of mushroom soup
Shredded Cheese

1.     Bake chicken and then shred or cube.
2.     Line casserole dish with Doritos.
3.     Mix rotel, onion, sour cream, taco seasoning, and soups together.  Mix this with shredded/chopped chicken.
4.     Layer over Doritos
5.     Top with cheese and bake at 375 degrees until cheese is melted.   Approximately 30 minutes.

 

Sausage Squares
1 - roll of sausage
1 - 4oz cream cheese
1 package crescent rolls

1.     Cook the sausage in a pan until browned
2.     Combine sausage and cream cheese in a bowl and mix.
3.     Take an 8x8 pan, and lay a  layer of unbaked crescent rolls (I think it takes 4 crescent rolls a layer) on the bottom of the greased pan.
4.     Spread the sausage/cream cheese mixture on top of unbaked crescent rolls.
5.     Take reaming crescent rolls and cover the top.
6.     Bake about 15 minutes or until top is golden.
7.     8x8 pan will make 9 sausage squares. 

(I doubled this recipe for a casserole pan)
